Everyone at Focus Fitness is a big fan of Jenny Lofaro's powerful combination classes.  Jenny is a superhero instructor that leads up to 6 classes a day, if not more. The question always remains: "What does Jenny eat to keep her energy up all day and that also keeps her so fit?"  Jenny makes these delicious Protein Puff Cookies in 2 flavors.  Make them at home and let us know what you think.  ENJOY! 

 

Mint Puff Cookie

  • 2 cups Kamut puffs
  • 2 cups Millet puffs
  • 1 cup rolled oats
  • 1 cup Stevia baking sugar
  • 2 scoops Chocolate Quest Protein
  • 5 tbsp Dark Chocolate Chips
  • 6 tbsp of Egg Substitute or 2 Egg Whites (can use full egg)
  • 1-2 tbsp Peppermint Extract
  • 1-2 tbsp baking soda
  • 1 cup water

-Mix all ingredients together, spoon out 18-20 cookies per batch

-Bake at 350 degree, 7-8mins

-let cool, best if kept refrigerated after baking

Banana Puff Cookies

  • 1 ripe banana
  • 2 cups Kamut puffs
  • 2 cups Millet puffs
  • 1 cup rolled oats
  • 1 cup Stevia baking sugar
  • 2 scoops Chocolate Quest Protein
  • 5 tbsp Dark Chocolate Chips
  • 3 tbsp vanilla extract
  • 1-2 tbsp baking soda
  • 1 cup water

-Mix all ingredients together, spoon out 18-20 cookies per batch

-Bake at 350 degree, 7-8mins

-let cool, best if kept refrigerated after baking
